Simple Crock Pot Chicken Dinner

This recipe takes minimal prep time and freezes well for use 1-2 weeks later.

1 lb organic chicken thighs or 3 organic chicken breasts

1 can black beans

1 can diced tomatoes

1 package dry soup mix (I use onion, spring vegetable, tomato basil, etc)

3/4 cup frozen corn kernels

In a slow cooker, add black beans, diced tomatoes, corn, soup mix and chicken meat (whole breasts or thighs, you can shred it after it’s cooked a while). Put slow cooked on for 5 hours. After about 2-3 hours, stir and start to shred the chicken using 2 large forks. If it doesn’t shred easily, cook one hour longer and try again. Stir once or twice per hour after that. Then enjoy! Freeze some for dinners in 1-2 weeks.
