White Bean and Chicken Sausage Soup:
This soup is so easy, fast and tasty (and healthy, ofcourse)!
1 carton (32oz) low sodium chicken broth (I use Pacific Organic)
1 can navy(white) beans
1 can diced tomatoes
2 packages of fully cooked chicken sausages (I use Hans or Aidelle’s of any flavor variety-available at Costco) sliced into 1/2 inch pieces
1 8oz package of fresh baby spinach or chopped fresh kale
1 tbsp olive oil
1 clove garlic
Use large pot or dutch oven. Heat olive oil gently over medium heat and add minced garlic to heated oil for about 1 minute. Then pour in chicken broth, beans, tomatoes and cut-up sausages. Bring to a gentle boil for about 5-10 minutes. Then turn heat down to low and add fresh spinach or chopped kale and stir until just wilted. Then serve!
