Recipe of the week Sept.20th, 2010

Marinated Wild Caught Sockeye Salmon with parboiled petite green bean and almond sautee (optional Farro grain).

I just made this for some friends this weekend. It was so easy and such a hit! Even my kids were raving about it. I marinated the salmon in a zip lock bag for about 2 hours. Then place it on foil on the grill on medium heat for about 15 minutes. Test with a fork to see if it’s done. The salmon will flake easily but still be soft in the middle.

Salmon marinade:

1/4 cup light soy sauce

1/4 cup dry Vermouth

1 tbsp honey

1 tsp garlic powder

juice of 1/2 lime

Green Beans:

I used the frozen Organic Petite Green Beans from Costco. Place 1/4 bag frozen green beans in boiling water for about 4-5 minutes, then drain in a collander and rinse briefly with cold water.  Meanwhile, heat up 2 tsp olive oil, 1 tsp butter, 1/8 cup sliced raw almonds in stainless steel sautee pan over medium low heat.  When the butter, olive oil and almonds are warmed through, add the parboiled green beans and toss until coated. Sprinkle with a little Sea Salt if desired after cooking.

This is a satisfying dinner, even without starch. I will sometimes pair it with Organic Farro (a low gluten, whole wheat grain) that I cook in water with 2 tsp of Organic Better Than Bouillion Vegetable stock for fantastic flavor. I toss in some fresh Oregano and it’s a simple crowd pleaser. Stick to 1/2 cup portion (100 calories).

All of the above main ingredients (Fresh Wild Sockeye Salmon, Organic Green Beans, Organic Farro) I purchased at Costco Wholesale club, but can be found at most grocery store.
