Spinach & Cheese Casserole

Prep: 10 minutes • Bake: 45 minutes • 8 servings

2 cups cottage cheese
1 10-ounce package frozen chopped spinach, thawed and well drained
⅓ cup crumbled feta cheese
3 eggs, beaten (or egg substitute)
¼ cup butter, melted
3 tablespoons whole wheat flour
2 teaspoons dried minced onion

Preheat oven to 350⁰. Lightly coat a 1 ½ – quart casserole with nonstick cooking spray; set aside.
In a large bowl, combine all the ingredients and mix well. Pour mixture into the prepared casserole.
Bake, uncovered, for 45 minutes or until center is almost set and the internal temperature registers 160⁰ on an instant-read thermometer.
